Paneer Butter Masala

For 4 people


Ingredients :


300 gm paneer (cottage cheese)

3 riped medium sized tomato

2 medium sized onion

1 medium green chilli

1 inch ginger

3-4 garlic buds

1/2 cup cashew

1/2 cup cream

3/4 cup butter


Spices :


1tsp of jeera (cumin seeds)

1/4 tsp of heeng (asafetida)

1 tsp of coriander powder

1/2 tsp of kashmiri red chilli powder

3/4 tsp garam masala.

1/2 tsp of turmeric powder

2-3 green cardamom

1-2 black big cardamom

1-2 bay leaves

1-2 cloves

1-2 cinnamon sticks

1/2 tsp of sugar

Salt according to taste


Method :


First soaked cashew in warm water for sometime.


Take a pan add a tea spoon of oil and add one spoon of butter, then add cumin seeds, and asafetida once the cumin seeds crackling add chopped onion and saute them on a medium flame till they turn into light pink colour.


Then add chopped tomato and mix with onion and saute them both together for few minutes and cover for 3-4 minutes in low flame.


When you will see tomato cooked properly and mashed then add coriander powder, turmeric,sugar and salt according to taste and saute.


Take out pan from gas and let it cool. Once it cools down make smooth paste of this mixture with soaked cashew. Paste should be very smooth. If you didnt get smooth paste, drain it with big steel drainer, you will get smooth paste.


After all this, take same pan on the gas add 2 spoon of butter and one spoon of oil. Once they became hot add green cardamom, black cardamom, cloves cinnamon stick and bay leaves. Once they crackling add ginger, garlic and green chilli paste in it and saute all for few seconds.


Once it done add onion - tomato paste on it, mix all properly. Then add 1.1/2 cup water and mix well. Do not add too much water.


Cover and cook the gravy for five minutes in medium flame until the gravy turns thick.


When the gravy will be ready, you will see gravy is leaving oil/ butter from the sides. It means gravy is ready. Ifyou gravy is very thick add more water but not too much. Because in this recipe gravy should be enough thick.


Add cream and mix well, let it cook for 5 minutes more after that add garam masala and cubed paneer ( cottage cheese). Mix all paneer into the gravy softly.


Atlast make butter tadka with red chilli powder.


Take tadka pan add rest all butter and melt then add half tsp of red chilli powder. When the chilli crackling remove from heat and spread all over on gravy. Garnish with coriander leaves and cream.


Its ready enjoy with tandoori roti and salad or with steam rice.
