Ingredients :
2 cups of khoya
2 tbsp of milk
2 tbsp of desi ghee
1/2 cup of sugar powder or caster sugar
1/2 tsp of cardamom powder
1/2 tsp of nutmeg powder
Some caster sugar for coating.
Method :
Firstly take large heavy kadhai, heat 2 tbsp of ghee on medium flame.
Now add khoya, break and mix with ghee.
cook until the mawa turns to crumble texture.
once the mixture turns dry, add 2 tbsp milk.
Saute continuously on medium to slow flame. Do not stop otherwise khoya will start to burn.
After 30 - 40 minutes you will see khoya is getting crumble and turning in dark golden brown colour.
Once the mixture turns golden brown in colour and crumbled properly. Switch off your gas and transfer the mixture into blender cool slightly.
Blend coarsely and transfer into a bowl.
Now add 3/4 cup of caster sugar or sugar powder or according to your taste. Add 1/2 tsp of cardamom powder and 1/2 tsp of nutmeg powder.
Add 2 tbsp of milk and mix all properly with your hands. Make sure everything is well combined. Milk gives moisture to mixture.
Take a ball sized mixture in your hands and give round, square whatever shape you want.
Shape well.
Roll into caster sugar coat from all sides.
Now its ready. Refrigerate and serve up to a week.
Mathura peda tastes great when it's moist.
