No Onion No Garlic Tomato Curry

In India most of the people do not take eat onion and garlic in food. Specially in Jains and mostly marwadi baniya's family. But some have started to take. In hindus family in India people avoids onion garlic during any spevific festivals and puja.
Both are considered Tamsic foods and so avoided by strict Hindus.
So here i m presenting a tomoto curry without onion and garlic. You can use this curry paste with veggies.
Ingredients :
○5 medium sized tomatoes
○1/2 cup of cashew
○1/2 of melon seeds
○1 tbsp of ginger paste
○3-4 medium sized green chilli
○1/2 tsp of asafoetida
○1tsp of cumin seeds
○1 tsp of turmeric powder
○1 tsp of coriander powder
○1/2 tsp of red chilli powder
○1 tsp of garam masala.
○1/2 cup cream
○oil for cooking
○water for cooking
1 tsp of salt or according to taste.
Method :
Firstly you have to wash tomatoes properly and give a cut on the top of the tomatoes as picture.
Then keep them for boiling 5-10 minutes on stove.
In another small pan boil melon seeds and cashew for 5 minutes and strain the water and keep them aside.
After 5-10 minutes strain all the water from boiling tomatoes and let them cool.
Now peal the upper layer of tomatoes and cut them into pieces. And make smooth paste of tomatoes in grinder with green chilli, ginger, and boiled melon seeds and cashews.
Take another pan add 1 tbsp of oil. When the oil becomes medium hot add cumin seeds and asafoetida. Let them crackle.
In the same time in a bowl make a watery mixture of turmeric powder, red chilli and coriander powder, now add into the pan and stir for few minutes.
Now add tomato paste into the pan and cook until you get thick paste and oils leavings from the sides of the paste. Add salt.
Then add a cup of water and bring it to boil. Now add 1/2 cup cream or fresh cream of home's milk. And mix it. At last add 1 tsp of garam masala. Stir for few minutes its ready.
You can add this curry or gravy with any choice of your veggies and in dishes.
You can store this curry into the airtight box for atleast 1-2 months into the freezer.
