Mumbai ka Vada Pav.

A famous street food of mumbai and Pune. Spicy potato filling sandwiched between buns and layers of spicy garlic and green chutney!


Ingredients


Pavs (buns)

4-5 Boiled potatoes

1 cup besan (gram flour)

2 tbsp of tamarind paste

1/2 cup of jaggery

4 tbsp dry grated coconut

Some peeled garlic buds

Ginger

Some curry leaves

Cilantro

Mint leaves

Lemon juice.

4-5 Dry whole red chillies

Oil for frying


Spices


Roasted cumin seeds powder

Red chilli powder

Carom seeds

Dhaniya powder

Black salt

Salt

Sugar.

Heeng (asafetida)



It has some steps


1- Imli Chutney ( a sweet and tangy tamarind paste with some spices.)


2- Hari Chutney (A spicy and tangy cilantro & mint paste with ginger- garlic and lemon.


3- Dry Lehsun Chutney ( A very spicy dry chutney of garlic with red chilli, sugar, salt and coconut.


4- Boiled mashed potato balls with spices which called vada.


5- Besan ( gram flour) batter for dipping the vadas into it and fry.


6- Pavs ( buns a special Indian bread ).


7- Atlast assemble the vada - pav with all these.



Method of Imli chutney :



Traditionally tamarind chutney made by soaking tamarind in hot water and then seprate the pulp - drain and cook with some spices. But here i will share with you instant tamarind chutney.


Mostly i use ready made imli (tamarind) paste for imli chutney.


Take a pan add one cup water, add half cup jaggery let it boil. Once the jaggery melted into the water add two tbsp of ready made imli paste and mix it well into the boiling water.


Let them cook for few minutes then add half tsp of salt, half tsp spoon of roasted cumin powder, half tsp of red chilli powder. Mix all properly and let them boil for few seconds.

Now the imli chutney is ready.



Method for Green Chutney :


Its a very famous chutney. It goes with many Indian dishes and Indian snacks. For this you need. A bunch of cilantro, a bunch of mint leaves, 2-3 cloves of garlic, 1-inch ginger piece, 3-4 green chilli, juice of one lemon, half tsp of roasted cumin powder, half tsp of dry mango powder, half tsp of black salt. Take all and grind them together into the grinder and make smooth paste. Green chutney is ready.



Method of dry Garlic Chutney :


This is a dry chutney. For this you will need 4-5 dry whole red chilli, 4 tbsp dry grated coconut, 5-6 peeled garlic buds, half tsp sugar and salt. Grind them all together into the grinder. In taste it is very spicy and this is one of the main chutney of vada pav. Its ready.



Besan batter for vadas. (Gram flour batter) :


Take a bowl add one cup of besan (gram flour), add less then half spoon of salt, half tsp of carom seeds, dhaniya powder (dry roasted coriander seeds powder) and add some chopped cilantro leaves. Add water and make thick batter.



For vadas :


Vada is made by deep frying spiced potato balls/rounds. You will need 3-4 boiled potatoes. Peel all the potatoes and mashed proper with masher. Add half tsp of salt, half tsp of roasted cumin powder, some curry leaves, pinch of heeng (asafetida). Mix them all with mashed potatoes and make small balls with tht mixture and then fry them in hot oil after coating them in a besan batter.



All is done now time to assemble all things.


First you need to heating up the pav with some butter on tawa. Do not bake too much just bake for few seconds only. Give a cut between the pav and apply or spread all 3 types of chutney on the both white side of pavs in layers. Then place a vada on a half part of pav and cover it with another part. Press it gently and serve with some more chutney.
