Kaddu Ki Sabzi (pumpkin)

Very easy and delicious khatti meethi sabzi. In India you will find at every home in normal days specially on lunchand during Navratres and fasting days. It is also known as petha sabzi at some places.


Kaddu is a hindi name of pumpkin. People love to eat it with pooris, kachories and parathas. During Navratre fast kaddu ki sabzi & kuttu ki poori or singhare ki poori is the best combination.


You can find two types of kaddu (pumpkin) in markets. Yellow one and green one. Yellow pumpkin's skin is very hard you have to peel it before cooking. But green pumpkin you can cook with skin.


Here i m cooking green skin pumpkin with skin. Which is very easy to cook.


Ingredients :


1/2 kg of green skin pumpkin

1/2 tsp of fenugreek seeds

1/2 asafoetida powder

1/2 tsp of turmeric powder

1/2 tsp of red chilli powder

1 tbsp of coriander powder

1 tsp of salt or according to taste

1 tsp of amchoor powder or a 1 tbsp of lemon juice

1 tbsp of jaggery or 2 inch of jaggery

1 tsp of garam masala

2 tbsp oil for cooking.


Method :


You start with wash and chop the kaddu in 1 inch pieces and you see the pith and the seeds into the kaddu. Dont throw away i will share it in notes what to do with them.


Wash kaddu and cut into pieces. Place a pan or pressure cooker on the gas in medium flame. I am cooking in pan. Add 2 tbsp of oil into the pan/cooker.



Once the oil becomes hot add 1/2 tsp of fenugreek seeds and 1/2 tsp of asafoetida powder. Let them crackle.


Now add cutted pumpkin pieces into the pan/cooker and stir for few minutes.



In Pan :


Add all the spices except garam masala in pan. Mix all properly and stir for 2-3 minutes. Add half cup water and cover with lid. Cook for 5 minutes.


Add 1cup of water with jaggery and cover the pan with lid. And cook for 10 minutes.


Cook for 5 - 10 minutes more. Once the kaddu cooked completely. It will become very soft.



Now add garam masala and amchoor powder/ lemon juice. Mix it properly.

Its ready.


In pressure cooker :


After added all spices. Add 1 cup water and jaggery if you are cooking into pressure cooker. Close your pressure cooker and give 2-3 whistle in pressure cooker for cooking.


Now close your gas stove and let the pressure release by it self. After releasing the pressure open it.


And mix with spatula with little push. Add garam masala and amchoor powder/ lemon juice. Mix properly. Its ready now.



Note: If you are making for fasting do not use regular salt. Use sendha salt into it.


What you can do with seeds of pumpkin. Clean the pith from seeds and sun dried.


After sun-dried roast into pan or in oven. Toss with salt and spices and eat. Pumpkin seeds are very nutritious and healthy. It has very high contents of protein.
