Recipe
Ingredients
1 cup sugar
1 cup water
1/2 tea spoon of lemon juice
1 cup khoya (mawa)
1.1/2 cup unsalted besan sev.
1 tea spoon of elaichi(Cardamom powder)
1/2 cup milk
Yellow food colour optional
Some dry fruits for garnish.
Besan (gram flour)
Method
First make the sugar syrup. To make the sugar syrup add sugar to a pan on medium heat. Now add water and mix till sugar dissolves. After 4-5 minutes add half tea spoon of lemon juice and yellow food colour(optional) into the syrup, syrup will develop a one string consistency which means that if you put a drop of the syrup between your thumb and index finger and move the fingers apart, you will notice the syrup forming one string/thread.
Now add a cup of milk into syrup and mix proper. Then add half cup of khoya (mawa) rest keep aside for another step, mix khoya properly and let it cook for 2-3 minutes then add crushed unsalted besan sev into it and cardamom powder and mix all properly and cook for few minutes. Once you get thick consistency of besan during cooking switch of your gas stove.
Next step
Take any square shape cake tin or utensil. Grease with desi ghee or unsalted butter. Line a butter/baking paper on the bottom of utensil.
Now add rest mawa or khoya into the barfi mixture, mix all proper. Now transfer the prepared mixture into greased cake tin/utensil lined with baking paper. Set well.
Now garnish the top with few chopped mix dry fruits and press slightly.
allow to set for 30 minute, or till it sets completely.
Now unmould and cut into square piece
Its ready now, keep it store in air tight box at cool area.
