Aloo Tamatar ki Sabzi

Aloo tamatar ki sabzi is very easy. It goes very well with poories and parathas. People mostly prefer to eat it with poori/ kachori in breakfast. With aam ka achaar.



Ingredients :


3 medium sized finely chopped tomatoes

4 medium sized half boiled potatoes

1tsp of grated ginger

2 green chilli

1 tsp of cumin seeds

1/4 tsp of asafoetida powder

1 tbsp of coriander powder

1/2 tsp of turmeric powder

1/2 tsp of amchoor powder

1/2 tsp of red chilli powder

1 tsp of garam masala

1 tsp of salt or according to taste

2 tbsp of any vegetable oil or ghee

Fresh coriander leaves for garnish.



Method :



Take pressure cooker and place on medium flame now add oil or ghee into it. Once the oil becomes hot add cumin seeds and asafoetida powder. Let them crackle.



Now add grated ginger and green chilli.

Stir for few seconds now add chopped tomatoes into it.



Stir for 5 minutes. Then add all the spices except garam masala and amchoor powder. Mix all with tomato paste. Leave it on slow flame for 3-4 minutes let the cook tomatoes with the spices.



After 3-4 minutes you will see tomatoes cooked properly and mushy. Stir it.



Now add potatoes pieces with some garam masala into it. And mix properly. Add 2 cups of water and lock the pressure cooker. Give 2 -3 whistle to the cooker.


Switch off the gas and let the pressure release by it self.



Open the pressure cooker add garam masala amchoor powder. Mix it and garnish with fresh coriander leaves.



Enjoy it with poori kachori matthi.
